Kalita

Kalita is a Japanese based company that specializes in producing coffee brewing equipment. Most notably they are the creators of the Kalita Wave Dripper and Kalita Wave Kettle. The Kalita Wave Dripper brings an innovative design to the pour over process with its wave filter and flat-bottom geometry.

The wave filter helps temperature stability by keeping the water away from the brewer material and using air as an insulator. The flat bottom geometry helps provide an even extraction. In addition to the wave dripper, Kalita supplies high quality filter paper for pour over coffee, coffee servers and pour over kettles.

What is pour over coffee?

The pour over technique is one of the most gentle and simple way to brew coffee. Generally, you pour hot water over freshly ground beans that sit inside a filter. From here the water slowly extracts into the mug or serving glass below and you have yourself a beautiful cup of coffee!

Why is Pour-over coffee better?

Pour over is one of our favourite brewing methods, it is known for producing clean, sharp and a bright cup! The water passes through the grounds at its own time and own pressure, by using gravity fed extraction the water is allowed to extract all the delicious oils and fragrances. The filter then catches a lot of oils which removes that bitter taste giving you a delicious well rounded, crisp cup.

What equipment do you need?

Filters: You’ve got a few options here, filter or cloth, bleached or unbleached. Now it really comes down to personal preference when choosing your filters. However some claim unbleached can present quite a papery taste but this can depend on what brand you get your filters from. The majority of people like bleached filters as they don’t usually affect the flavour as much when brewing!

Scales: Coffee scales have become a key part of weighing coffee in the Pour-over coffee making process. The ultimate goal is to brew the perfect coffee in whatever alternative-brewing method you choose. For pour-over and filter coffee, the coffee scales monitor the weight, time and flow-rates as you brew coffee and on some scales you can use the app provided to bring the coffee making process to life.

Kettles: Pour Over coffee kettles are a key part of drip coffee, filter coffee and immersion coffee brewing. The stainless-steel styles vary in size, weight and feel. However, the main difference between a standard one and one used in pour over filter coffee is the gooseneck spout. The Gooseneck is a thin spout allowing for a much more controlled and precision pour.
