Description

Toddy Cold Brew Coffee Maker and Tea Maker

The Toddy coffee maker extracts the coffee bean's true delicious flavor and eliminates much of the acidity, producing a bold, super-smooth coffee that can be served one cup at a time. This all began in 1964 when Todd Simpson, a chemical engineering graduate of Cornell, developed and patented a cold brew system that, using regular coffee beans, creates a superior-tasting cup of steaming hot coffee. With 67% less acidity than coffee made by conventional hot brew methods, the this method of coffee took off. Today, the Toddy cold coffee maker is an awesome addition to any home, office or speciality cafe this summer.

A little more history on why cold brew. A roasted coffee bean contains many compounds that are extracted during the brewing process. Some of those compounds, including certain oils and fatty acids, are soluble only at a high temperature. During the cold brew process, coffee beans are never exposed to high temperature (this only occurs after a rich liquid coffee concentrate has been produced).

Deceptively simple, cold water brewing extracts the delicious flavor compounds (and some of the caffeine) from coffee beans, but leaves behind myriad bitter oils and biting fatty acids, including undesirable elements such as ketones, esters and amides.

These are the same bitter acids and fatty oils that surface to the top of your hot cup of coffee, and give hot-brewed coffee that familiar 'bite' (thus the reason that some 8 out of 10 people attempt to soften the acidic taste by adding milk or cream to their coffee).

With a 2 litre brewing container and a glass decanter with an air-tight lid, this device is a great option for brewing up a batch of cold brew and keeping in the fridge for up to two weeks. Serve either steaming hot or iced cold, enjoy cup after cup of cold-brewed perfection.

Brewing Methods

METHOD 1: Toddy Dual Filtration

  • Recommended for easy clean up
  • Most cold brew per batch
  • Works with more coffee grind sizes and smaller tea leaves
  • 12 oz (340 g) coarse-ground coffee + 7 cups (56 fl. oz./1.65 L) water
  • 8 oz (230 g) tea leaves
  • Yeilds 9 cups (72 fl. oz./2.13 L) water

For the best flavour, start with 12 ounces (340 g) of coarsely ground coffee and 7 cups (56 ft. OZ./L65 L) of filtered water by volume.

Fill First, insert the stopper into the outside bottom of the brewing container; then, dampen the disc shaped felt filter and insert it into the inside bottom of the brewing container. Next, open the top of your paper filter bag and place the bag into the brewing container. Pour 12 ounces (340 g) of coarse-ground coffee into the bag, followed by 7 cups (56 fl. oz./1.65 L) of water. Stir coffee grounds gently with a spoon or spatula, to ensure saturation of grounds. Tightly twist the top of the bag to close it.

Brew - Steep your coffee grounds at room temperature 12 to 24 hours to create a smooth, rich flavour.

Filter - Remove the stopper and let your coffee concentrate flow into the glass decanter. Remove and discard paper filter and coffee grounds. Coffee concentrate will stay fresh for up to 2 weeks in your refrigerator.

Serve - We recommend starting with a ratio of 1 part coffee concentrate to 3 parts water, milk or soy. Mix to taste, making your coffee as strong or as weak as you prefer. For rich, smooth iced coffee simply pour coffee concentrate and water, milk or soy over ice. Stir concentrate with steaming hot water for a flavourful yet gentle cup of hot coffee.

METHOD 2: Toddy Classic • Toddy's original tried-and-true method developed in 1964

  • Polished cold-brew concentrate with virtually no sediment
  • Requires only reusable felt filters
  • 12 oz (340 g) coarse-ground coffee + 7 cups (56 fl. oz./1.65 L) water
  • 8 oz (230 g) of tea leaves
  • Yeilds 9 cups(72fl.oz./2.13L) water

Fill First, insert the stopper into the outside bottom of the brewing container; then, dampen the filter and insert it into the inside bottom of the brewing container.

Next, add 1 cup (235 mL) of water into the bottom of the Toddy brewing container and 6 ounces (170 g) of ground coffee. Slowly pour 3 more cups (710 mL) of water over the grounds, in a circular motion. Wait 5 minutes, then add the remaining 6 ounces (170 g) of ground coffee. Finally, slowly add the last 3 cups (710 mL) of water. DO NOT STIR (stirring the bed of grounds can result in a clogged filter). Lightly press down on the topmost grounds with the back of a spoon to ensure all grounds are wet.

Brew Steep your coffee grounds at room temperature 12 to 24 hours to create a smooth, rich flavour.

Filter Remove the stopper and let your coffee concentrate flow into the glass decanter-stays fresh for up to 2 weeks in your refrigerator.

Serve We recommend starting with a ratio of 1 part coffee concentrate to 3 parts water, milk or soy. Mix to taste, making your coffee as strong or as weak as you prefer. For rich, smooth iced coffee, simply pour coffee concentrate and water, milk or soy over ice. Stir concentrate with steaming hot water for a flavourful yet gentle cup of hot coffee.

For the best flavor, start with 12 ounces (340 g) of coarseiy ground coffee and 7 cups (56 ft. OZ./L65 L) of filtered water by volume.
